Sausage Bites

Retro food alert!  I was planning brunch the other day and remembered this easy recipe that I think originally came from the wrapper of Jimmy Dean sausage.  It is easy and makes a tasty addition to a brunch buffet or can be just as good as an appetizer or game snack.  The recipe makes a lot (about 50 or so) and after you bake them, you can freeze any leftovers in a plastic freezer bag.  Then, when you need just a few—take them out, put them on a baking sheet and bake them in a 400-degree oven for about 5 or 6 minutes.

Sausage Bites

Makes 12 servings (about 4 per person)

1-pound medium spice bulk pork or turkey sausage
2 cups baking mix (I used Bisquick)
3 cups shredded sharp cheddar cheese

Preheat the oven to 400 degrees.  Line two baking sheets with parchment paper.  In a large bowl, combine the sausage and the baking mix.  Add in the cheese. Use your hands to completely mix until well blended.  The dough won’t really come together until you roll it into 1-½ inch balls.  Place these on the baking sheets and bake until they are golden brown, about 15 minutes.

    Love these! Try adding a little water or milk to the batter so they don’t get too dry. One of my family’s favorite recipes.

    I like the suggestion to add a little moisture to the batter–2 tablespoons would surely do the trick–thanks for the idea Jackie…
