Star Fruit Salad

Several years ago, one of my neighbors invited us and several other neighbors over to their home for an authentic Indian dinner.  (Their family is American of Indian descent.)  Along with a lot of really delicious food, we were served this salad.  Correction—a version of this salad.   I could not stop eating it— a little embarrassing because I kept taking spoonful after spoonful—much more than my share.  But the salty, sweet, spicy, tangy, fresh taste of it was just exquisite.  I asked her for the recipe and she was kind enough to give it to me.  It was from an Indian cookbook called Saroj’s Cookbook.  Several ingredients in the original recipe were spices that I didn’t want to make a special trip to buy.  So after several tries, I’ve adapted it with spices that I always have on hand– with a result that I like a lot.  I hope you will too.

Star Fruit Salad

Serves 8

Ingredients:

1 small clove garlic, peeled and mashed
2 ripe star fruit, thinly sliced
1 cup fresh pineapple, chopped into small bite-size pieces
1 small sweet onion (like Vidalia) thinly sliced
2 Granny Smith apples, peeled and diced into ½ inch pieces
1 yellow pepper, seeded, halved and thinly sliced
1 cup dry roasted or other salted peanuts
2 teaspoons powdered sugar
¼ teaspoon cayenne pepper
1 teaspoon ground cumin
½ teaspoon ground mustard
1 tablespoon white vinegar
1 tablespoon fresh lemon juice
3 tablespoons fresh mint, coarsely chopped
3 tablespoons fresh cilantro, coarsely chopped
Kosher salt and freshly ground black pepper to taste


Preparation:

Rub the inside of a glass or wooden salad bowl with the mashed garlic.  Add the star fruit, pineapple, onion, apple, yellow pepper and peanuts to the bowl and stir to combine.   Sprinkle the mixture with the powdered sugar, cayenne pepper, cumin, and ground mustard and toss gently but thoroughly.  Add the white vinegar and toss again.  Stir in the fresh mint and cilantro and finally add the kosher salt and freshly ground black pepper to taste.
