Party Chopped Salad

Here is a salad that everyone loves.  Chopped salads where you really take the time to chop the ingredients nicely are a joy to look at and a joy to eat.  Every bite has almost all of the ingredients in it, so the whole really comes together.  I like this for a party because it can be served with a single large spoon, and your guests can either leave room on the plate for all of the other goodies on your table—or fill up on this healthy and really tasty salad.

Party Chopped Salad

Serves 8

Ingredients:

For the Salad:

1 head romaine lettuce, rinsed, dried and chopped into ½-inch pieces
3 medium tomatoes, seeded and chopped into ½-inch pieces
½ cup red onion, diced
1 English cucumber, seeded and diced
12 radishes, chopped
6 strips of bacon, cooked, drained and crumbled
2 Haas avocadoes, peeled, pitted and chopped
12 Kalamata olives, drained and chopped

For the Dressing:

Juice from 1 lime
2 teaspoons Dijon mustard
½ teaspoon celery salt
1 tablespoon Worcestershire sauce
1/3 cup extra-virgin olive oil

Preparation:

Chop all of the salad ingredients and place in a large salad bowl.  In a small bowl, place the lime juice, mustard, celery salt and Worcestershire sauce.  Whisk in the olive oil.  Pour half of the dressing over the salad and toss.  Taste, and add more dressing and salt and pepper to taste.
